Saffron Mayonnaise

Make this mayonnaise a day ahead so the saffron can release its beautiful golden color.

Saffron Mayonnaise

Ingredients

  • 10 saffron threads
  • 250 ml sunflower oil
  • 4 egg yolks
  • 2 tsp smooth mustard
  • 2 tbsp lemon juice
  • Salt to taste

Instructions

  1. Soak the saffron threads in 2 tablespoons of warm water.
  2. Whisk the egg yolks with the mustard and a pinch of salt.
  3. Add the oil drop by drop while continuing to whisk.
  4. Once it emulsifies, you can add the oil in a thin stream.
  5. Add the saffron water and lemon juice.
  6. Season with salt to taste.
  7. Store covered in the refrigerator, at least one day before use.
