Saffron Mayonnaise
Make this mayonnaise a day ahead so the saffron can release its beautiful golden color.

Ingredients
- 10 saffron threads
- 250 ml sunflower oil
- 4 egg yolks
- 2 tsp smooth mustard
- 2 tbsp lemon juice
- Salt to taste
Instructions
- Soak the saffron threads in 2 tablespoons of warm water.
- Whisk the egg yolks with the mustard and a pinch of salt.
- Add the oil drop by drop while continuing to whisk.
- Once it emulsifies, you can add the oil in a thin stream.
- Add the saffron water and lemon juice.
- Season with salt to taste.
- Store covered in the refrigerator, at least one day before use.
