Sloppy ToubToub

My family loves this Sloppy ToubToub: a vegetarian version with lentils, tomatoes and mushrooms.

Sloppy ToubToub

Ingredients

  • 200 g cooked lentils
  • 50 ml olive oil
  • 400 g chestnut mushrooms, quartered
  • 1 red onion, roughly chopped
  • 3 cloves of garlic, minced
  • 2 tsp smoked paprika powder
  • 100 g salted roasted cashew nuts
  • 75 g grated aged cheese
  • 50 g butter
  • Salt and freshly ground black pepper
  • 4 brioche buns
  • Pickled vegetables of your choice

Instructions

  1. Heat the olive oil in a large frying pan.
  2. Fry the mushrooms on high heat until golden brown.
  3. Add the onion and garlic and cook for 2 minutes.
  4. Add the lentils and paprika powder.
  5. Stir in the cashew nuts, cheese and butter.
  6. Season with salt and pepper.
  7. Toast the brioche buns.
  8. Spoon the mixture onto the buns.
  9. Top with pickled vegetables.
