Sloppy ToubToub
My family loves this Sloppy ToubToub: a vegetarian version with lentils, tomatoes and mushrooms.

Ingredients
- 200 g cooked lentils
- 50 ml olive oil
- 400 g chestnut mushrooms, quartered
- 1 red onion, roughly chopped
- 3 cloves of garlic, minced
- 2 tsp smoked paprika powder
- 100 g salted roasted cashew nuts
- 75 g grated aged cheese
- 50 g butter
- Salt and freshly ground black pepper
- 4 brioche buns
- Pickled vegetables of your choice
Instructions
- Heat the olive oil in a large frying pan.
- Fry the mushrooms on high heat until golden brown.
- Add the onion and garlic and cook for 2 minutes.
- Add the lentils and paprika powder.
- Stir in the cashew nuts, cheese and butter.
- Season with salt and pepper.
- Toast the brioche buns.
- Spoon the mixture onto the buns.
- Top with pickled vegetables.
