Sweet Eggplant
These eggplants may look complicated, but it's really a simple cooking trick with less than ten ingredients.

Ingredients
- 2 eggplants
- 3 tbsp olive oil
- 3 tbsp honey
- 3 tbsp pomegranate molasses
- 3 tbsp toasted sesame seeds
- 2 tsp sumac
- 6 tbsp Turkish yogurt, for garnish
- 2 tbsp pomegranate seeds
- Cress, for garnish
Instructions
- Cut the eggplants lengthwise into slices about 1 centimeter thick.
- Heat the olive oil in two large frying pans.
- Fry the eggplant slices golden brown on both sides.
- Mix the honey with the pomegranate molasses.
- Drizzle the fried eggplants with the honey mixture.
- Sprinkle with sesame seeds and sumac.
- Garnish with Turkish yogurt, pomegranate seeds and cress.
