Sweet Eggplant

These eggplants may look complicated, but it's really a simple cooking trick with less than ten ingredients.

Sweet Eggplant

Ingredients

  • 2 eggplants
  • 3 tbsp olive oil
  • 3 tbsp honey
  • 3 tbsp pomegranate molasses
  • 3 tbsp toasted sesame seeds
  • 2 tsp sumac
  • 6 tbsp Turkish yogurt, for garnish
  • 2 tbsp pomegranate seeds
  • Cress, for garnish

Instructions

  1. Cut the eggplants lengthwise into slices about 1 centimeter thick.
  2. Heat the olive oil in two large frying pans.
  3. Fry the eggplant slices golden brown on both sides.
  4. Mix the honey with the pomegranate molasses.
  5. Drizzle the fried eggplants with the honey mixture.
  6. Sprinkle with sesame seeds and sumac.
  7. Garnish with Turkish yogurt, pomegranate seeds and cress.
