Brioche Cake

Your calorie counter will start twinkling from this one. But every now and then I think I deserve it, and this brioche with figs sits on my table.

Brioche Cake

Ingredients

Brioche dough

  • 250 g flour
  • 7 g dried yeast
  • 40 g sugar
  • pinch of sea salt
  • 3 eggs
  • 125 g butter (room temperature)
  • 3 tbsp milk (lukewarm)

Topping

  • 4 fresh figs (cut into wedges)
  • 2 tbsp honey
  • 2 tbsp pistachios (chopped)
  • powdered sugar, for dusting

Instructions

  1. Dissolve the yeast in the lukewarm milk and let it sit for 5 minutes.
  2. Mix the flour with the sugar and salt in a large bowl. Make a well and add the eggs and yeast mixture.
  3. Knead the dough for 10 minutes until smooth and elastic. Add the butter piece by piece and keep kneading until all the butter is incorporated.
  4. Cover the dough and let it rise for 1 hour in a warm place.
  5. Preheat the oven to 180 degrees Celsius.
  6. Gently press the dough flat on a baking sheet lined with parchment paper into a flat round disc shape.
  7. Arrange the fig wedges on the dough and press them in lightly.
  8. Bake the brioche for 20-25 minutes until golden brown.
  9. Drizzle with honey, sprinkle with pistachios, and dust with powdered sugar.
