Brioche Cake
Your calorie counter will start twinkling from this one. But every now and then I think I deserve it, and this brioche with figs sits on my table.

Ingredients
Brioche dough
- 250 g flour
- 7 g dried yeast
- 40 g sugar
- pinch of sea salt
- 3 eggs
- 125 g butter (room temperature)
- 3 tbsp milk (lukewarm)
Topping
- 4 fresh figs (cut into wedges)
- 2 tbsp honey
- 2 tbsp pistachios (chopped)
- powdered sugar, for dusting
Instructions
- Dissolve the yeast in the lukewarm milk and let it sit for 5 minutes.
- Mix the flour with the sugar and salt in a large bowl. Make a well and add the eggs and yeast mixture.
- Knead the dough for 10 minutes until smooth and elastic. Add the butter piece by piece and keep kneading until all the butter is incorporated.
- Cover the dough and let it rise for 1 hour in a warm place.
- Preheat the oven to 180 degrees Celsius.
- Gently press the dough flat on a baking sheet lined with parchment paper into a flat round disc shape.
- Arrange the fig wedges on the dough and press them in lightly.
- Bake the brioche for 20-25 minutes until golden brown.
- Drizzle with honey, sprinkle with pistachios, and dust with powdered sugar.
