Falafel Macaron
If I get to choose from a display full of cookies, you can bet I'll set my eyes on the macaron. In this recipe I make a savory version with falafel.

Ingredients
Falafel shells
- 200 g chickpeas (canned, drained)
- 1 clove of garlic
- handful of fresh cilantro
- handful of fresh parsley
- 1 tsp cumin
- 1 tsp ground coriander seed
- pinch of sea salt and pepper
- 2 tbsp flour
Filling
- 100 g hummus
- 2 tbsp tahini
- juice of half a lemon
- pinch of sumac, for garnish
Instructions
- Preheat the oven to 180 degrees Celsius.
- Blend the chickpeas with garlic, cilantro, parsley, cumin, coriander, salt, pepper, and flour into a firm dough.
- Shape small round discs from the dough, slightly smaller than a macaron. Place them on a baking sheet lined with parchment paper.
- Bake the falafels for 15-18 minutes until firm and lightly golden brown.
- Mix the hummus with the tahini and lemon juice into a smooth filling.
- Let the falafels cool. Pipe or spoon the hummus filling onto half of the falafels and place a second falafel on top, like a macaron.
- Sprinkle with sumac and serve immediately.
