Sesame Tahini Cookies

Just like hummus, I often use tahini as a savory flavor enhancer, but sometimes you need to challenge yourself. So here it is - sweet is where I put it.

Sesame Tahini Cookies

Ingredients

  • 200 g tahini (sesame paste)
  • 150 g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • pinch of sea salt
  • 50 g sesame seeds, for coating

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. Mix the tahini with the sugar in a bowl until smooth.
  3. Add the egg, vanilla extract, baking powder, and sea salt. Stir everything together well.
  4. Scoop small balls of dough with a spoon and roll them through the sesame seeds.
  5. Place the balls on a baking sheet lined with parchment paper and press them down slightly.
  6. Bake the cookies for 10-12 minutes until golden brown at the edges.
  7. Let the cookies cool on the baking sheet before removing them. They will firm up as they cool.
